Everything we do at Capa Negra begins long before the curing room. It begins in the wooded pastures: centuries-old holm oaks and cork oaks, the ever-changing climate of the Sierra de Huelva as the seasons turn, and a land that has spent centuries perfecting the rearing of Iberian pigs. We do not replicate this environment; we were born into it.
One breed, one character
The brand’s name refers to the dark skin of the Capa Negra Iberian pig, an animal that is also distinguishable by its slender legs and black hooves. The colour of its skin is an unmistakable trait of this Iberian breed, as unmistakable as the flavour of its products, the result of the tradition and climate of the Sierra de Huelva.
This food boasts exceptional gastronomic qualities: Iberian hams and cured meats of the finest quality, “its exquisite products hold countless hidden delights and incredible taste sensations”.
A flavour shaped by the landscape
The Sierra de Huelva sets the scene: the altitude, a microclimate and a breeding tradition passed down through generations. For centuries, this region has been the heartland of Iberian ham.
In the case of our acorn-fed ham, it is during the ‘montanera’ (fattening season) – from October to March – that the pigs roam the wooded pastures, feeding on acorns, wild plants and grass. This gives each slice of ham its distinctive marbling and flavour.
